Hawksdrift Barrel Fermented Sauvignon Blanc 2015

An intriguing and incredible value deal on a Sav for Chard drinkers. Thanks to the barrel fermentation, it's earthy, oaky, and layered with gravel and bees wax notes. Yeast lees influence on the wine adds complexity, along with spice, minerailty, a touch of wild honey and citrus.

4 Stars, Raymon Chan "Bright, even straw-yellow colour with pale golden hues, lighter on the edge. The nose is elegantly concentrated and firm with good intensity of ripe green stonefruits, showing nectarines and gooseberries, along with balanced creamy and nutty barrel-ferment notes. This has good freshness to the aromatics. Dry to taste and medium-full bodied, the palate has rich and deep flavours of green stonefruits, with nectarines and gooseberries to the fore, unfolding fresh herb notes, melded with creamy, butty barrel elements and subtle smoky nuances. The palate has power and the mouthfeel fulsome with good presence. The wine flows along a very fine line with lacy acidity, leading to a lingering, light finish of stonefruits and herbs. This is a rich and powerful, oak- influenced Sauvignon Blanc with green stonefruit and creamy, nutty, smoky oak, and good presence. This is a well-balanced oaked Sauvignon Blanc with freshness, balance and power. It will drink well over the next 3+ years."

Wine that has been fermented and aged in oak barrels has a longer shelf life than non-barrel aged wines and because it peaks for a longer time it remains at its best for many years. It mellows with age becoming creamier, smoother and develops subtle changes with flavours of spice.

Barrel fermented wine cannot be hurried in the wine making process. It takes 18 months to 2 years to complete. Even then not every barrel meets the high standards of our winemaker for flavour and therefore after 2 years of maturing may end up being reassigned. Due to the wine making process of barrel fermented/aged wine Hawksdrift produce a wine with lower sulphite levels.
