This 18-year-old whisky is made by combining whisky matured in two types of casks: sherry-style butts and refill European oak.
The first cask, Pombe yeast, gives lifted hints of green apple and ex-bodega casks for richness, the other cerevisiae yeast and refill European Oak butts. Their marriage is as sweet as the song of the house martins that swoop around the worn tubs.
