"Fully organic Fancrest. Pinot Noir grapes were hand-picked from Fancrest Estates own vineyards before being brought to the winery to undergo a long and slow fermentation. Once complete the juice was given time to rest in high quality, old French oak barrels for around 18 months before being bottled unfined and unfiltered and rested again for another year. The result of all this hard work in the winery is a restrained and refined wine, with all those savoury, earthy notes you would expect from well made, well-aged Pinot. Hand harvested and 100% destemmed without crushing into open top fermenters, wild ferment helped along only by gentle hand plunging. This was followed by a long slow post fermentation maceration. Maturation took place in a selection of quality tight grained French oak barriques (mainly Allier and Tronçaise), none new, for 18 months.
One of the more vibrant Lindauer's that brings a zesty twist to bubbly. Seeing as it's from Sauvignon Blanc grapes there are bright notes of passionfruit and fresh gooseberry flavours.
