Fruit growing: The fruit for the Pinot Grigio is grown along the ridgeline block on the Thomas vineyard. The ridgeline is the most exposed to the wind and rain. The site is nice and cool day and night, it is well suited to white wine. The 2019 growing season was one for the record books. Spring conditions were ideal, flowering was wet yet still and calm. It rained almost all of December, the water table was stocked for a long dry summer. January to March saw some exceptionally hot days with a few weather events. 2019 will be remembered for a bumper harvest and ripe, concentrated wines.
The Pinot Grigio was harvested early March to retain the acidity in the fruit. Hand harvested, whole bunch pressed to tank, cold settled for 5 days (to get the juice nice and clear). The juice was inoculated with a cultured yeast strain to produce a crisp fruity aromatic wine. Fermented to dryness, aged on fine yeast lees for 6 months, estate bottled January 2020.
